The absolute best water does not exist, however there are waters which are functional to the needs of each of us and have parameters which are closer to the concept of "purity", a concept which we associate to an excellent organoleptic parameter, that is not perceiving anything while tasting water.

Ridracoli Dam
The water we use in Riccione Piadina comes from Ridracoli Dam, a local spring in the province of Forli - Cesena.
It is a crystal clear water, with a balanced content of mineral salts and a neutral pH, which makes it excellent both for consumption as drinking water and for cooking preparations.

Cervia salt is sweet, a real whole sea salt. It originates from sea water and it is a whole product because after harvesting it is processed only with Acqua Madre, a water with an hight salinity than the regular sea water but lower than that of salt and is rich in oligoelements. Cervia's salt is called sweet for geographical and chemical reasons in the first place. Given its geographical position, the salt obtained from it is made up of extremely pure sodium chloride and the decision not to dry it artificially preserves its humidity and typical color, which is not bleached but maintains its natural grayish pink color.
