Pork fat

Pork fat is obtained from the fat parts of the pork and it is a widely used ingredient in cooking because it is rich in vitamin D and monounsaturated fats.  Riccione Piadina only uses lard obtained from pigs bred in Italy by controlled breeders who guarantee the quality of the product and its processing without the addition of chemical additives but with the sole use of steam as the processing method.
 
Why is lard used in some preparations? Its use is beneficial to increase the volume of the mass and contrasts the loss of humidity. Moreover, lard helps to keep food fragrant after cooking.
For this reason it is an almost irreplaceable ingredient of many bakery products and it is typically present in the recipe of piadina romagnola IGP, both in the Riminese version and in the Romagnola Spessa version.

Its use in cooking has a millenary tradition: until 1950s in the countryside it was used for the preparation of a wide range of recipes, even to dress salads, something that may seem rather obsolete, and it was used to preserve products.
Besides the above mentioned uses, it was also employed in many non-food preparations, such as waterproofing procedures and in the production of soap, all uses which have been lost over the ages.
