The piadina in your hands has a lot to tell you. This package was produced in our production department in San Giovanni in Marignano, a typical town in Romagna.
It is made according to our historical recipe, a company heritage for over 25 years, a recipe that has been improved over time thanks to the constant search for the best preparation and top-quality ingredients, selected with the utmost care, with an eye to our planet that takes into account the origin of raw materials, respect for those who work, combining taste with the guarantee of the product.

First choice raw materials.
More than Italian: the wheat is only from Romagna
The soft wheat flour, the main ingredient of our piadina, has chain certification. We can finally say that it is Romagna wheat cultivated only in the lands of Romagna (provinces of Rimini, Forlì-Cesena, Ravenna and part of Bologna) by selected farms, which comply with a production specification that certifies the commitment to produce only in certain geographical areas, guaranteeing the precise reporting of all activities carried out. Wheat is stored in dedicated centers where only those from the supply chain are stored.
A heartfelt choice, made to be even safer and to enhance our wheat grown in the typical climate of Romagna, just like the wheat used by our grandmothers. From the ear of wheat, we choose only a small percentage: about 10% becomes, in fact, the flour chosen for our piadins. We choose this small part that is the heart of the wheat, it is the most valuable and allows us to obtain so good and tasty piadina
Few selected ingredients
The water comes from the Ridracoli dam, a local source, in the province of Forlì Cesena. It is crystal clear and rich in mineral salts. Water is the second ingredient in the recipe, fundamental for the aggregation of flour and the formation of gluten. It is by choosing the right amount of water that we obtain the best alchemy to give life to a quality piadina.
We have chosen the best lard, obtained from pigs strictly bred in Italy, so as to maintain a high quality in the final product.
The salt is extracted and processed in Italy. Choosing Italian salt is a further confirmation of how much we believe in our local economies, always safe and guaranteed. Similarly, the raising agents are of Italian origin.
IGP, do you know what that means?
This piadina is PGI, an acronym now in common use, which you can find on other products such as cheese, vinegar, cured meats and many others, which means Protected Geographical Indication. Infact, a PGI PGI complies with a production regulation that establishes the areas in which the product must be processed and sets rules on the production of the same in terms of raw materials, shape, color, thickness.
Being PGI is a source of pride, it is a further enhancement of the product, a recognition for which Riccione Piadina has always been in the forefront, promoting its importance and fighting to certify a product that is increasingly appreciated and known as the Piadina Romagnola.
Specifically, this piadina is IGP "alla Riminese", or thin, and is typical of the southern area of Romagna. It is the best-selling piadina and most recognized by you, the consumer, who appreciates its versatility and ease of use.
The alchemy we have created
We take care of the dough at every stage
The birth of piadina is magic. The ingredients mix harmoniously, blending in a slow process to form a homogeneous, uniform dough that will then be portioned.
In the initial phase the lower temperature allows the closure of the porosity characteristic of the rolled out dough, then the higher temperature allows the piadina to swell and flake. This method is designed to stabilize the product in the best possible way, keeping the piadina soft, so that it arrives on your table as if it had just been prepared.
Information on the packaging
An easy-to-read label
If you carefully read the back of the package you can discover even more about our product. First of all you can discover when it was produced, thanks to the production batch number, marked by the letter “L” followed by 5 numbers:
- the first two mark the production year,
- the last tree the production day (starting from 001 for 1st January), at the side you can also read the time that the piadina was packed.
Over the production batch there is also the expiry date (DD-MM-YY) that indicates the limit date to consume the product.
The package you are handling has a preservative atmosphere in the inside, that allows us to keep the product fresh without any chemical preservative or use of alcohol. The 45-day-long shelf life is the result of this preservative atmosphere. Of course, the expiry date of piadina is valid as long as it is kept in the fridge between +2°C to +6°C. Once the package is opened, piadina must be consumed within few days. Piadina can be also be stored frozen.

This certification assures the maintenance of a high level of responsibility towards consumers, the fulfilment of the laws regarding food products, the maintenance of high safety and hygiene standards. They also guarantee the use of selected raw materials, without any GMO ingredient.
