
Quality and traceability
The Cassone, a treasure from the heart of Romagna, a typical recipe that comes with a long tradition, that originates from piadina and becomes something more. We offer it in a pack of 2 cassones carefully prepared just for you.
This package was produced in our production plant in San Giovanni in Marignano. It requires more processing because it combines our Piadina Romagnola IGP alla Riminese with a tasty filling of tomato and mozzarella.
We use our Piadina Romagnola IGP alla Riminese because it is the best known and most appreciated, the most beloved by Italians. To make it, we have chosen Romagna wheat grown and processed in the provinces of Rimini, Forlì-Cesena, Ravenna and part of Bologna. It was chosen to enhance the local raw materials, and also because it grows in the typical climate of Romagna, just like the wheat used by our grandmothers. From the ear of wheat we choose only a small percentage: about 10% becomes, in fact, the flour chosen for our piadina. This small part allows us to obtain such good and tasty piadina.
Even the lard chosen is the result of constant research. We wanted the best, constantly controlled, high quality. Thanks to the right amount of water we obtain the right alchemy to make such a soft piadina. Salt and leavening agents are also meticulously chosen, safe and guaranteed.
Once the piadina is ready, we proceed to stuff it with a mix of ingredients that requires a slow and careful processing to ensure that everything is mixed at its best.
We have worked for a long time on this special stuffing, choosing the best raw materials, those that would give us the guarantee to obtain such a good result, that melts in your mouth. And after stuffing it, we seal it at the edges. This is how the cassone was born.
If you carefully read the back of the package you can discover even more about our product. First of all you can discover when it was produced, thanks to the production batch number, marked by the letter “L” followed by 5 numbers:
- the first two mark the production year,
- the last tree the production day (starting from 001 for 1st January), at the side you can also read the time that the piadina was packed.
Over the production batch there is also the expiry date (DD-MM-YY) that indicates the limit date to consume the product.
The package you are handling has a preservative atmosphere in the inside, that allows us to keep the product fresh without any chemical preservative or use of alcohol. The 30-day-long shelf life is the result of this preservative atmosphere. Of course, the expiry date of piadina is valid as long as it is kept in the fridge between +2°C to +6°C. Once the package is opened, piadina must be consumed within few days. Piadina can be also be stored frozen.

This certification assures the maintenance of a high level of responsibility towards consumers, the fulfilment of the laws regarding food products, the maintenance of high safety and hygiene standards. They also guarantee the use of selected raw materials, without any GMO ingredient.
